One of the things I love the game, are the references latinas of James. Among them, the huevos rancheros (they are delicious). For those who do not know, here I share the recipe for the Abuela.

Total Time: 50 minutes

Step 1: You will need:

  • 4 eggs
  • 6 tbsp olive oil
  • 1 onion, chopped
  • 1/2 red pepper, diced
  • 1/2 green pepper, diced
  • 3 garlic cloves, minced
  • 250 g tomatoes, chopped
  • 1 tbsp jalapeno pepper, minced
  • 1 tsp cumin powder
  • 100 ml chicken stock, or water
  • 2 tbsp coriander, chopped
  • 4 tortillas
  •   salt and pepper
  • 1 saucepan and lid
  • 1 wooden spoon
  • 1 frying pan

Step 2: Begin the sauce

Place the saucepan on a medium to high heat and allow it to warm through a little. Add some olive oil followed by the onion, red pepper and green pepper. Stir and allow them to cook for roughly five minutes until soft. Stir occasionally to stop them burning. Add a little more oil, whilst it's cooking, if needed.

Step 3: Continue the sauce

Add the garlic, stir it in and allow it to cook for about a minute. Add the tomatoes, jalapenos, cumin powder and the stock. Season it all with some salt and pepper and stir once more to mix everything together. Lower the heat to a simmer and cook until it thickens, which should take about 5-7 minutes.

Step 4: Add the eggs

Once the sauce begins to thicken, gently pour the eggs on top. Cover with the pan lid and reduce the heat. Let it cook for another 7-10 minutes or until the eggs are set. Once set, remove the pan from the heat.

Step 5: Fry the tortillas

Let the frying pan warm through again. Add a small amount of oil then place one tortilla into the hot pan. Fry it for a few seconds on each side, just enough to warm it through and make it slightly crispy. Remove it and set it aside. Pour in a drop more oil, add another tortilla into the pan and fry. Continue the frying process with the remaining tortillas.

Step 6: Garnish and serve

Put a tortilla on a serving plate, place an egg into the centre and spoon some of the sauce around the egg. Sprinkle over some coriander and serve.

Ahaha, awesome for doing this. This was one of the moments I appreciated in the game, but I did wonder what the recipe had other than eggs.
